1 tbsp runny organic honey

Directions
Prepare the Carrots: Parboil the carrots for 4 minutes to soften them slightly. Drain thoroughly and pat dry.
Preheat the Oven: Set the oven to 180°C (fan).
Coat the Carrots: In a mixing bowl, toss the carrots with olive oil until evenly coated.
Prepare the Spice Blend: Using a mortar and pestle, crush the fennel seeds, sea salt, and pepper together to release their aroma. Add this spice blend to the oil-coated carrots and mix well to ensure even distribution.
Roast the Carrots: Arrange the carrots in a single layer on a roasting tray. Place on the middle shelf of the oven and roast for 20 minutes.
