3 cups non-dairy milk

1 teaspoon nutmeg shelled, grated

2 teaspoon maple syrup more to taste
Directions
Shell your nutmeg (if bought in the shell), then grate using a fine grater.
Pour the non-dairy milk into your pot and sprinkle in the nutmeg. Heat gently for 5-6 minutes until it is warm, and very slightly bubbling, but not boiling.
Take off the heat and whisk in the maple syrup.
Place a small strainer over your cups and pour the milk through. Dust with a little cinnamon if you like, then serve immediately.
Recipe Note
- If your nutmeg is still in the shell be sure to remove it before grating.
- I suggest using the 'fine' grate on your grater.
- While you can use a wooden spoon, I do find that using a whisk to infuse spice into milk to be a better option.
- I suggest not boiling, but just bringing the milk to a hot temperature with very light bubbling.
